A decadent cake if we ever saw one, you'll love our sweet version of caramel apples! The perfect recipe for fall baking, and a great dessert for Thanksgiving (or any holiday), this is a super simple cake that just looks incredible.

Caramel Apple Upside Down Cake Recipe

Ingredients for the caramel base
  • 1 and ½ cups of white sugar
  • 2 tbsp unsalted butter

Ingredients for the cake
  • 2 apples, cored and peeled
  • 1 cup soft cream cheese
  • ½ cup milk
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 cup sugar
  • 2 cups all-purpose flour
  • 3 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon powder
  • ¾ cup walnuts or pecan nuts for garnish

Ingredients for the sauce
  • 1 cup heavy cream or whipping cream
  • ¼ cup maple syrup
  • 2 tbsp butter
  • ½ cup brown sugar
  • 1 cup apple cider
  • ¼ tsp salt
  • ½ tsp cinnamon
  • ¼ tsp allspice

Directions for cake
  1. Preheat the oven at 350 F°.
  2. Cut the apples in fine wedges and arrange over the caramel in the cake mold.
  3. Put the cream cheese, the milk, the eggs, the vanilla extract, and the sugar in a big bowl and whisk with an electric hand mixer.
  4. Sift in the flour with the baking powder and the baking soda and the cinnamon, mixing to combine all the ingredients.
  5. Pour the batter over the apples in the cake mold and bake for about 25 to 30 minutes or until a wooden toothpick comes out clean.
  6. Let it stand 2 minutes outside the oven and unmold on a plate.

Directions for sauce
  1. Combine all the ingredients in a saucepan and cook over high heat until the sugar is dissolved, then reduce the heat to medium and cook 10 minutes until it reduces a little. Let it stand at room temperature until it cools.
  2. Once cooled, pour some of the sauce over the previously cooled cake and decorate with the nuts.
