Fished directly from the Bay of Biscay in Cantabria, Spain, these delicious little fish are salted the same day they come out of the ocean. Quickly seasoning them helps capture and preserve the fresh briny taste of the ocean before they are packed away for the next 12-18 months. A year later, these fish are finally ready to be processed. Each tiny fish is carefully filleted, trimmed, and skinned by hand before being placed in tins.

Unfortunately, this overcooks small and delicate fish like anchovies and makes them rubbery and unpleasant to eat. To retain their structural integrity and preserve there tender and delicious texture El Capricho’s anchovies are never heat treated. Though they are not shelf-stable, refrigeration is enough to keep them tasting fresh and delicious for up to 18 months!
