What are Cockles?

Cockles live in heart-shaped, deeply furrowed shells on shallow coasts and estuaries around the world. Lying a couple of inches below the sand, cockles are hand-picked at low tide. While the size and color of cockles vary widely depending on where you find them, they all have one thing in common: they’re delicious! Their tempting interior, when raw, is similar to that of the oyster, but with a quick plunge into boiling water or a few minutes over steam transform their flesh from pale lipid grey to a beautiful orange. Delicious and quick to cook, cockles are also a healthy seafood option. Low in fat and high in protein and other valuable minerals and nutrients, they make a wholesome addition to any well-varied diet.
