This Manchego by Finca Sierra La Solana is a rare farmstead Manchego, meaning both the farm and creamery are on the same estate in Spain. Aged for six months with an un-waxed rind, this cheese develops a toothsome, slightly granular texture with a meaty aroma and subtle notes of nutmeg and cinnamon. The natural rind allows it to breathe, creating a tender crumble that sets it apart from other Manchegos.
Made from the milk of ewes raised on the historic Finca Sierra La Solana, dating back to 1878, this Manchego boasts the unmistakable sweetness of sheep’s milk balanced by warm spice and a long, savory finish. Pair it with almonds, plums, or classic Spanish hams like Iberico or Serrano.
