Guinness® and Wagyu Beef Stew RecipeIngredients 2.5 lbs wagyu beef stew meat4 tbspn clarified butter1 large chopped Valencia white onion (or sweet onion)3 raw strips of bacon, chopped into 1/4 inch strips2 tbsp tomato paste2 tbsp all purpose flour1 11.2 oz Guinness Extra Stout beer3 cups of beef stock6 small yellow potatoes, washed, peeled and uncut1 tsp dried marjoram½ tsp dried oreganoSalt and pepper to tasteYour favorite hearty breadDirectionsIn a hot pot, melt the clarified butter on medium-high heat and sautee the Wagyu beef chunks in the melted butter. Once browned on all sides, remove the meat from the pot, but leave the drippings intact.Add the onions, bacon, tomato paste and flour to the drippings. Mix regularly so the onions don't burn. When the onions begin to crystallize (about 3-5 minutes), reduce the heat to a simmer and add the Guinness® Extra Stout beer and beef stock carefully to avoid flare-ups. Resume stirring until well combined.Return the cooked beef chunks to the pot along with the peeled potatoes. Season with the marjoram, oregano, salt and pepper.
