Made from semolina flour hand-rolled using the ancient Berber methods, blended with extra virgin olive oil and salt. This couscous has a great thick and coarse texture, with large grains and a lovely peppery fragrance. It's left to sun dry and then stored with red peppers for that delicious and inimitable flavor and a beautiful presentation. Cook with the red peppers for a kick of heat or remove prior to cooking. Serve with fish, lamb, chicken or vegetables.
