Peanut Butter Truffle Cake Balls RecipeIngredients2 ½ cups confectioners' or powdered sugar1 ½ cup smooth peanut butter5 tbsp. unsalted butter, melted1/2 tsp. vanilla extract¼ tsp. salt1 lb. bittersweet baking chocolate chips, melted in a bowl and at room temperature3 oz. milk chocolate, meltedDirectionsIn a bowl using an electric mixer, beat sugar, peanut butter, melted butter, vanilla extract and salt - make sure it's well mixed and even.Refrigerate for 2 hours.Scoop about 1 tsp. of mix and form it into the truffle shape - round or spiked, then place on a baking sheet lined with parchment paper. Freeze or continue to the next step immediately.Coat each truffle with melted chocolate, using a fork or spoon, tapping to remove excess, then place on a freshly lined baking tray.
