Pears and Blue Cheese Tart RecipeIngredients4 pears, washed and cut into wedges (seeds removed)1 lemon, juiced2 tbsps. Butter1 tbsp. Olive oil2 sheets puff pastry7 oz. mascarpone cheese3 tbsp. Blue cheese, crumbled or chopped½ tsp. Black pepper1 egg9 oz. blue cheese3 tbsp. Toasted almonds, chopped1 egg yolk1 tbsp. Water3-4 tbsp. blond cane sugarDirectionsAdd two lemon halves to a small bowl of water. Cut the pears in wedges and keep them in the water bowl (this prevents darkening).Add butter and oil to a medium saucepan over medium heat. Sautee pears - both sides - for about 2/3 minutes and reserve to cool.Preheat oven at 375 °F.Arrange one sheet of puff pastry on a baking sheet.In a bowl mix the egg yolk with 1 tbsp of water, beating until just combine and brush onto puff pastry.With the other puff pastry sheet, cut into into strips about ½ inch wide. Create a border at edge of the bigger pastry sheet and brush again with the yolk. Note: If your pastry sheet is thin and the border isn’t at least ¼ inch tall, use extra strips to give the border some height.Mix mascarpone and blue cheese with pepper and the whole egg. Pour and and distribute evenly over the pastry sheet.Place the pears on top, and add the remaining blue cheese.
