Our Raclette de Savoie is a raw cow’s milk cheese ripened for at least ten weeks. With a pronounced nutty-tangy flavor and firm texture, when heated it becomes creamy and smooth, and is often used as a melting cheese. If you want to eat it the traditional way, melt it and serve with boiled potatoes and cornichons, pickled onions or cured meats. Alternatively, incorporate it into contemporary dishes like grilled sandwiches or tacos.
This Raclette is a creation of Schmidhauser,
a family of cheesemongers originally from Switzerland but now
located in the ancient French Alps. By marrying traditional
