Shepherd's Pie with Guinness RecipeIngredients1 ½ tbsp. extra virgin olive oil3 garlic cloves chopped1 onion, chopped6 tomatoes, peeled, deseeded and cubed1 cup carrots, peeled and cubed1 lb. lamb meat, cubed (small) or ground1 cup beef stock1 cup Guinness Beer2 tbsp. Worcestershire sauce1 tsp. thyme1 cup green beans1 cup peas1 cup corn6 potatoes, peeled and cubed1 stick butter, cubed½ cup milk, hot½ cup shredded Cheddar cheeseDirectionsHeat the oil in a pan over medium heat and cook the garlic, onion and tomatoes until they are tender, 5 to 7 minutes, stirring.Add salt, black pepper and carrots, cook, stirring, until carrots are just tender, 5-7 minutes.Add lamb meat and cook until fully cooked, 6-8 minutes, then pour beef stock, beer and Worcestershire sauce, bring to boil and simmer on low about 8-10 minutes. Add beans, peas and corn and cook 3 minutes more, then remove from heat and transfer to a baking dish.Boil the potatoes until tender, then mash with the butter and milk, season with salt and pepper to taste.Turn oven to medium.Cover the lamb filling with the mashed potatoes, making a neat and smooth layer, then sprinkle with cheddar cheese.
