Also known as “dry butter”, Beurre de Tourage is dry, unsalted, and presented in thin sheets that are perfectly designed for folding. It starts with Brittany butter, boasting 82% butterfat, and it’s especially thought for the crafting of laminated dough pastries – croissants, puff pastry, danishes, all start with Beurre de Tourage. All you need to do is layer the butter sheets with your pastry dough, and voila, you get perfect, flaky, even pastries every time.
What makes Beurre de Tourage special?
Unlike regular butter, it has just the right mix of fats and water, crucial for great results.Its melting point is above 34°C, ensuring consistent performance even in warmer conditions. This means you can easily create perfectly layered pastries.
Why does butter flexibility matter?
Beurre de Tourage spreads smoothly, resulting in even layers every time. This guarantees beautifully textured, crunchy pastries. Plus, its creamy or nutty flavor adds an irresistible touch to every bite.
Each of the butter sheets are standardized to a melting point of 93°F-96°F (34-36°C) and weighs 2.2 lbs. (1kg), measuring 11.75” x 7.25” (29.83cm x 18.41cm). Store at minus 4°F (-18°C). Once defrosted, may be stored for 75 days at a maximum of 43°F (6°C). Store this butter for puff pastry frozen, defrost prior to use. For best results: 39°F - 46°F (4°C & 8°C).
