What is Bolognese Ragu?
The word Ragu can be traced back to Gaulish cuisine, known as “Ragôut” in French. It roughly translates to “whet the appetite” or “give more flavor.” Originally more of a stew than a sauce, it was a meat-forward creation making it an expensive dish. A favorite among the elite classes: for the rest of Europe this special dish was reserved for holidays and feasts.
By the 18th century, chef Alberto Alvisis, head cook to the Cardinal of Imola, began to combine his tasty ragus with “maccheroni” pasta. This new method for serving quickly became popular and was featured in several Emilia-Romagna cookbooks of the day. Prepared in a similar way to those ancient days, this traditional Bolognese still makes dinner feel like a special event.
