Brownie Truffles RecipeIngredients2 eggs1/2 teaspoon salt1 cup sugar1 tablespoon pure vanilla extract1 stick butter3 ounces unsweetened chocolate, chopped3/4 cup all-purpose flour½ teaspoon baking powderA pinch of salt3/4 cup chopped walnuts4 oz. semi-sweet chocolate1/4 cup heavy cream1 lb. dark chocolate 70%, melted1/2 cups mini chocolate coated cereal balls (optional)DirectionsBeat the eggs and sugar with an electric mixer and add the vanilla extract.Melt the butter and chocolate in a double boiler, then mix with the eggs and sugar.Sift the flour with the baking powder and salt, then add to the mix above, folding with soft movements. Incorporate the nuts and pour into a square 8x8 inch mold lined with parchment paper.Bake at 350 F for 15 to 20 minutes. Reserve and cool at room temperature, then break into coarse pieces with your hands.Break the the brownie into small pieces with your hands and place in a heat proof bowl.In a double boiler, melt the chocolate with the heavy cream. Remove from the then add to the brownie pieces and mix well.Divide into small portions with a small scoop and make small balls.Melt the rest of the chocolate (1 lb.) in a double boiler or in the microwave.One by one, using a fork or toothpick, coat each brownie truffle ball with the melted chocolate. Sprinkle with cereal balls before they are completely set.
