Langres ChalanceyThis is a popular while rare cheese, hailing from the same town - Langres in the province of Champagne, France - that brought the literary world the great pen of Diderot. Sometimes compared to Epoisses, this is much subtler cheese and much more complex. It is sweet and flavorful, with a potent smell. A soft, creamy texture and an aftertaste some have described as soaked in honey and truffles.
