Goat Cheese On Green Pea Blinis RecipeIngredients 1 ¼ cups frozen green peas1 medium egg1 medium egg yolk½ cup milk4 tbsp. all-purpose flour4 tbsp. butter, melted + 1 tbsp. to coat pancake makerSalt and pepper, to taste½ lb. cherry tomatoes, sliced thinly2 garlic cloves, sliced thinly2 tbsp. olive oil3 tbsp. honey7 oz. firm goat cheese, cubed5.3 oz. button mushroomsJuice of ½ lemon2 tbsp. chopped chivesDirectionsIn a large saucepan, cover the pea with water and 1 tsp salt and boil until al dente. Immediately rinse under cold water so color won't bleed out.Place the peas, egg and eggs yolk, milk, flour and melted butter, and process in a food processor until you get a smooth and consistent "batter". Cover and take to the fridge for 20 minutes to cool.Melt 1 tbsp. butter on a griddle and pour ¼ cup of batter. Cook until golden, flip, and cook the other side. Remove and reserve. Make 12.Heat oven to 375 °F.Place the cherry tomatoes and garlic on a roasting pan and drizzle with 1 tbsp. each of olive oil and honey.
