Grilled Salmon Kebabs RecipeIngredients 3 skinless salmon filets (about 1 lb. each), cut into 1.5-inch cubes8 oz. button mushrooms2 zucchinis, cubedJuice of 1 large lemon5 tbsps. olive oilKosher salt (for the salmon)2 medium tomatoes, unseeded, cubed2 small red onions, chopped1 medium mango, cut into small cubes2 tbsps. champagne vinegarSalt and freshly ground pepper, to tasteDirectionsBrush your grill with oil and make sure your coals are evenly spread.Cut the veggies into cubes, trying to get the sizes as similar to the salmon as possible.Starting with a piece of salmon, thread salmon, zucchini and mushrooms, until the skewers are filled. Brush with olive oil, season with salt and pepper and grill, turning, 3-5 minutes on each side. Spray with lemon juice when done.For the salsa, toss the tomatoes, onions, mango, 3 tbsp. olive oil, vinegar and salt and pepper. Refrigerate until use.
