Honey Roasted Squash and Burrata Cheese Salad RecipeIngredients for the salad3/4 lb butternut squash wedges1 tsp salt½ tsp pepper3 garlic cloves not peeled and crushed2 tbsp olive oil2 tbsp honey4 burrata cheese pieces4 tbsp cranberries1 bunch baby spinachIngredients for the black olives and garlic citrus salad dressing4 tbsp olive oil2 tbsp black olives finely chopped1 small garlic clove finely choppedJuice of 1 orange1 tbsp Aceto Balsamico1 tsp salt½ tsp black pepperDirections for the saladSeason the squash wedges with salt and pepper.Put in a cooking oven pan with the garlic on the side, drizzle olive oil and honey. Toss to coat. Bake at 400F for 20-25 minutes until golden. Cool.Divide the spinach leaves into 4 plates mixed with the squash wedges.
