Embark on a gastronomic journey with Wilde Weide Gouda, a distinguished cheese from the renowned Dutch producer L'Amuse. Crafted with precision and aged to perfection, this artisanal Gouda exemplifies Holland’s rich tradition of cheese-making, delivering a culinary experience unlike any other.
Produced by husband and wife team Jan and Roos van Schie, this traditional Boerenkaas (farmhouse) Gouda is crafted from raw, organic cow’s milk. Living on the small island of Zwanburgerpolder alongside their micro-herd of Red Friesian and Montbeliarde cows, they produce four to six wheels of this special cheese daily. Hand pressed, then aged for three months on the farm, when ready, the Wilde Weide is rowed to the mainland and sent to L’amuse Affinage in Amsterdam to be completed under the care of Betty Koster.
Aged for a total of 15 months between the two locations, the finished cheese offers a profile unlike any other Gouda. Grassy and floral yet complex, it has notes of bourbon contained within its nuanced layers of flavor. The extended aging process, a hallmark of Wilde Weide Gouda, sets it apart in the world of gourmet cheeses.
