An award-winning sheep’s milk cheese, it’s sourced from Churra and Castellana sheep. Both breeds are native to the province and have a special aptitude for producing milk that is especially creamy and conducive to making cheeses. Grass-fed and raised on the local pastures, their milk has a distinct terroir giving this cheese its uniquely delicious flavor profile.
With a beautifully molded rind and creamy ivory paste, the taste is buttery, rich, and aromatic. Bathed in olive oil during its 4-6 month maturation period, it boasts the nutty and luxurious undertones of Spanish olive oil.
