Almond Paste vs. Marzipan
While many sources, including some cookbooks, use the terms Marzipan and Almond Paste interchangeably, they’re two distinct ingredients: each with their specific strengths. Almond paste has a significantly coarser texture but is much soft than Marzipan, making it the ideal choice for spreading as a filling in cakes or piping into cupcakes and the like. Almond Paste also holds up to baking, unlike Marzipan, allowing it to be added to doughs and batters. Lower in sugar and higher in almonds, for a product to truly be considered almond paste, it must be at least 60% almonds or higher.
Compared to almond paste, Marzipan has a higher proportion of sugar which makes it sweeter, smoother, and more pliable. It’s typically rolled, molded, dyed, shaped and served on its own or used as a decorative element.
