A succulent piece of duck foie gras, whole, completely delicious and sumptuous, micuit foie gras is cooked for a couple of hours in its container, to preserve the richness of the liver as much as possible while still rending it shelf-stable and perfect to eat right off the container.
Presented in a lovely mason jar, this attractive packaging is not only so pretty, it’s the classic presentation. The silky lobe is preserved with fine Armagnac brandy and select seasonings and is ready to eat. Just take out of the container, and spread over the freshest baguette you can find, top with some juicy and crunchy cornichons, and enjoy a select snack. For a more sophisticated but equally delicious presentation, slice and place on toast points with some coarse fleur de sel for an elegant canape.
This doesn't require refrigeration but tastes su much better when chilled, so before serving leave it in the fridge for about an hour, then take out a fewl minutes before serving so it’s cold but not ice-cold. Match with your favorite bottle of Sauternes, or a sweet late harvest or port wine.
