Mille-Feuille of Duck Foie Gras with Truffles, Micuit
Pure luxury: decadent layers of smooth duck foie gras, intermixed with the aromatic black truffles, in a combination that envelops the palate and ignites the senses.
This delicacy is called mille feuille (thousand layers), and it’s typically served simply with freshly baked bread or toast points. The point is to enjoy the texture of the foie gras as it is, without spreading it on the toast or bread, so the proper way to serve this mille feuille would be to cut it with a warm knife, and then place in on top of a slice of bread or toast. A little bit of fresh pepper, if you’d like, brings out the flavor. A dollop of a sweet fruit preserve, or a few pieces of juicy and sweet pears in wine would be fabulous. If you’d like to go the savory way, serve with good mustard or a balsamic spread.
Keep this in the refrigerator until about 15 minutes before serving. This fantastic foie gras and truffles delicacy serves about 8 to 10 people.
