Fougerus
One of the wonderful soft-ripened cheeses that the French are so famous for, Fougerus cheese is very similar in appearance and taste to the beloved Brie. It’s made from cow’s milk sourced from local farms south of Paris and has characteristic bloomy rind that blossoms around the round, with a paste that’s soft, buttery and a flavor that’s well balanced between sweetness and salt.
Fougerous cheese was created in 1960 by master affineur Robert Rouzaire, in honor of an older, more rare cheese by the name of Chevru. The name Fougerus is an homage to the fern leaves that adorn the top of each round of cheese, giving it a distinct appearance and a herbaceous aroma. Aged for about 4 weeks, this creamy fromage becomes runnier as it warms up, which makes it lovely spread on a warm baguette, but also a great choice for the cheese board, where the fern leaves become a decorative element.
