Q:how long will this last uncut in the fridge and or can it frozen
A:The Crottin cheese is a "living cheese", meaning that long as it does not get too cold (below 4-degrees Celsius) the mold in the rind will continue to work on the cheese. The riper the cheese gets, the softer and more flavorful it becomes. We would recommend using it within around 2-3 weeks from receiving it.
We do not recommend freezing it, as this can damage the texture of the cheese.
