Q:Aside from price, what is the difference between the Spanish Bomba rice and the Matiz Paella rice?
A:The Bomba Rice has a higher value in amylose than the Bahia rice (the Matiz Paella rice is the Bahia variety). Bomba is a short grain rice that absorbs three times its volume in broth (rather than traditional two) for wonderful taste and firm consistency when used in traditional paella.
