Reading Raclette
Drawing upon centuries of cheesemaking tradition, Springbrook Farm created their own interpretation of a the classic Swiss favorite: Raclette. Reading sticks to its traditional roots, offering a flavor profile that is at once savory and nutty with funky undertones. Interesting and complex, like its Alpine namesake, Reading is an excellent melter. However, its delicious profile and semi-firm sliceable texture make it a reliable addition to any cheese tray.
Made from raw Jersey cow’s milk, each wheel of Raclette cheese undergoes at least three months of washing. The finished cheese is an umami forward American farmhouse iteration of this iconic Swiss favorite. Try it alongside some crisp cornichons and a chilled glass of white wine, or melt it atop fresh summer peaches for an inventive new way to enjoy the bounty of the season.
Raclette cheese dates back to the 1300s, and Spring Brook Farms called on those centuries of tradition when making their own rendition of this ancient cheese. Each smooth, dense wheel of Raclette delivers layer after layer of complexity. Its rich umami-forward profile is versatile and delicious, lending itself to a wide range of possibilities.
Situated in Reading, Vermont, Spring Brook Farm is famed for their European inspired cheeses. Exclusively using raw milk, Spring Brook is able to create cheeses with more complexity.
