Wagyu Beef Blue Cheese Sliders RecipeFor the Sliders1½ lbs. ground Wagyu beef1 medium white onion, finely chopped1 tbsp. chopped parsley1 tbsp. olive oil12 small bunssalt and pepper to tasteFor the Toppings2 oz. blue cheese, crumbled8 cherry tomatoes½ white onion , sliced½ tbsp. olive oil1 tsp. sugar1 tsp. vinegar4 crispy smoked bacon slices4 tbsp. mayonnaiseA bunch of small parsley leavesDirectionsUsing a wooden spoon or spatula, mix the ground meat in a bowl with chopped onion, parsley and 1 table spoon olive oil. Season with salt and pepper to taste.Knead the mix with your hands for one minute. This will help achieve great texture.Divide the mixture in 12 parts, of about 2 oz each. Shape them into discs burgers and place them on a tray on top of parchment paper. Freeze the tray for half an hour prior to cooking.Start you grill and once it’s hot, cook the burgers 3 to 5 minutes on each side, until desired doneness.Halve the cherry tomatoes and sauté in a pan with ½ tbsps. olive oil. Set aside.Slice the ½ white onion and caramelize in a pan with olive oil, sugar and vinegar.
