Washed daily in a salty brine until fully mature, Walpole offers a rich and nutty flavor profile, with just the faintest hint of cheesy funk. Inspired by the famed Alpine cheese Raclette, its semi-hard texture, buttery taste, and excellent meltability perfectly capture the essence of the original.
Another delicious product of Wm. Cofield Cheesemakers, it holds its own amongst the growing assortment of domestic Raclette. From Michigan’s Leelanau to Vermont’s Jasper Hills Farms and beyond, the competition is stiff, but Wapole, if anything, has helped flesh out this category.
Made using raw organic cow’s milk, then aged for three to four months, Walpole receives daily washings of B. linens and brine. While Cofield is famous for their English-style cheeses, we’re certainly glad they’ve decided to explore the rest of Europe and can’t wait to see where they ‘travel’ next!
Similar to the famous Alpine cheese, Walpole can be used in the same recipes. Try melting it over vegetables, potatoes, or meats for a hearty Raclette-inspired meal. A great snacking cheese, it also makes an excellent addition to cheese boards and appetizer trays. To drink, consider pairing the nutty taste of Walpole with a chilled glass of Sauvignon Blanc, Riesling, or crisp beer.
