The tenderloin is considered by many to be the most luxurious and indulgent of all beef portions available. Soft, juicy, and flavorful, it’s quick to cook and needs nothing more than a little salt and pepper and a hot sear to become mouth-wateringly delicious! As a whole, it makes for a truly, tender roast or sliced into individual medallions to create that steakhouse favorite, filet mignon.

A long thin muscle located on either side of the cow’s vertebrae, the tenderloin is situated so that it experiences very little action or work during the cow’s life. This lack of use gives the tenderloin that velvety soft texture we love. Tender yet lean, these whole beef tenderloins are sold with the side muscle still attached; but with the majority of the surface-fat removed.
