They make what some say is the best and highest-quality rice vinegar in the world – we would agree. Besides using time-tested traditional techniques, they also use 100% pesticide free rice.
Known also as jun genmai su, this is the equivalent of extra virgin rice vinegar, made from unhulled rice – brown rice. This delicate vinegar, unlike more processed white rice vinegar, is perfectly balanced with a pleasing sweet acidity that marries wonderfully other ingredients rather than overpowering them. It’s widely used for pickling – like cucumbers- or for dressings. Iio Jozo uses sake to make their brown rice vinegar, and to make sure the entire process is flawless, they make their own sake using traditional techniques. The vinegar is aged for 8 months, to ensure it reaches the perfect balance and flavor profile.
