Cabot Clothbound
A classic Vermont cheddar, Cabot Clothbound is wrapped with muslin and carefully left to age at least 10 months in the impressive cheddar vaults at the Cellars at Jasper Hill. The texture of Cabot Clothbound is similar to that of a traditional English cheddar, with a flavor that has wonderful tones of burn caramel and milk, with nutty and savory notes.
Cabot Creamery was one of the first family farm cooperatives in Vermont, and today they are widely known for making exceptional American-style block Cheddar. Kempton Family Farm in Peacham, VT has been selected as the sole source for Clothbound, and Cabot crafts this cheese the old-world way - one vat at a time.
Ingredients: Pasteurized cow's milk, cheese cultures, salt, enzymes, annatto.
