Preparing elk is very easy, but like all game meats, it is much leaner than the more familiar options like beef. As such, there are a few cooking tips to render it the best it can be. The first and foremost of these is: to never overcook your elk. Taking your medallions, or any cut of elk, past medium-rare will result in a dry and significantly less than perfect finished dish. Around 130-140F is the ideal temperature, to render a juicy and succulent outcome. To maximize juiciness, opt for tongs or a spatula when cooking and turning elk.
