Our Parmigiano is DOP certified, meaning it’s a protected class of food, as such, the production of this specialty cheese is highly regulated and standardized, ensuring that its quality is consistent from batch to batch. According to its specific regulations, Parmigiano must be made from skimmed raw cow’s milk and can never be exposed to heat treatments common among many cheeses. Completely devoid of all additives, only natural enzymes may be used, and once salted and molded, must be allowed to cure for no less than 12 months (in our case 24 months) to be considered authentic Parmigiano Reggiano.
