Understanding Penne

Penne is a classic Italian pasta said to resemble the shape of a pen’s nib, thanks to its angled ends. The name is derived from the Latin word penne, meaning feather (think quill pen). There are two popular kinds of Penne: Penne Lisce and Penne Rigate. Rigate means striped, ridged, or furrowed, and these types of noodles have a corresponding ridged exterior. Lisce means smooth or polished, and as the name implies, this variety has a smooth exterior. Many believe the ridges on the Penne Rigate help sauces adhere to the noodle better.
