A:We would recommend to go with around 2 oz, as Black Summer Truffles tend to be milder in taste than their winter counterpart.

Q:How can I store unused fresh truffles? I heard that they can be stored in the freezer. If so, how does that affect its flavor and its shelf life and usage ?
A:We do not recommend freezing the truffles unless you have a lot of experience with truffles and preserving them. Fresh truffles should be used as soon as possible upon receipt. They can be stored in the refrigerator in an air-tight container for up to 3-4 days, as after that they would have little to no aroma left.
If you prefer to freeze them, you can keep them frozen for up to 3-6 months. Freezing the truffles will lead to some of the flavor being lost.
Q:can I use these by putting a whole truffle into my favorite olive oil to create my own truffle flavored oil?
A:Yes, you can use these to make truffle oil, but be aware their flavor is more subtle than the winter variety. Be sure to drain off all liquid from the truffle, and slice it as thinly as possible, so that it releases more of its flavor. Place the slices in olive oil or vinegar or even butter, and store in the refrigerator or a cool, dark place.
Q:What is the difference between small and medium in the item description? I would assume the description is referring to the size of the truffles, but I wanted to be sure. If it is in fact size, can you please quantify what "small" and "medium" mean in terms of circumference? Also, what is the variance scale in your grading (assuming the reference is in fact size?)
A:Truffles are graded by their size: larger truffles are considered better and they are more rare and thus more expensive. The small and medium size do refer to the actual truffles size. Per piece sizes typically run as follows: 0.7 - 1.0 oz each for the small size, 1.0 - 2.0 oz each for the medium size.
Q:Heard that winter truffles have more flavor, is that true?

Q:Are the summer truffles pre-washed or do you need to wash them after receiving them?
A:The truffles are cleaned but they still need to be washed before usage.
