Found in the lower chest, the brisket is the pectoral muscle of the cow responsible for holding a large portion of its weight. This working muscle requires a lot of connective tissue, which, when cooked using low, slow cooking methods, renders a finished meat that is fall-apart tender and meltingly delicious. Most commonly associated with Texas-style barbecue brisket also yields fabulous results when braised.
Like all our cuts of beef from AngusPure, our brisket is harvested from pasture-raised 100% grass-fed and finished cattle. There is a debate as to whether it’s better to use grain-fed beef vs. grass-fed beef (specifically, when it comes to brisket), because of the added marbling and fat developed thanks to their high sugar diets.
