Picholine olives are gathered before they are ripe, carefully treated to remove the natural bitter bite, and then rinsed and pickled in brine. The label on the picture shows French olives from Gard region of France. The label on the can I received states Tunisian olives. Yes, they are still called "Picholine", but they have little to do with the actual Picholine olives from Gard, France. These are soft and mushy, not nearly as flavorful. Disappointed. These are not better than the ordinary green olives from Italy, Greece and Turkey.

These are very good. Fresh and excellent "tooth", fresh flavor. A great bargain and better quality than small jars from Baral or Brunel.
