The Magret is the breast of a duck, specifically a Moulard duck that has been reared for foie gras. A cross between a Pekin hen and a Muscovy drake, the Moulard is favored for the Magret due to its impressive size and well-developed breast. Thanks to the specialty grain diet used to create Foie Gras, the Moulard breast boasts a sweet and mild flavor. Its generous layer of fat rendering beautifully during cooking to create a finished portion that is positively bursting with savory flavor and a juicy, yielding texture.
We source our duck breast Magret from La Belle farms located in the Hudson Valley. One of only three Foie Gras farms in the United States, La Belle, has a production rate of roughly 2500 birds a week, putting it right in the middle as the second-largest producer of the three. Unlike the more industrialized chicken, beef, and cattle operations throughout the nation, La Belle conducts every step of the enterprise in house, from breeding the ducklings to raising the chicks, slaughtering, processing, and packaging, every element of the process is performed on-site to ensure consistency in quality.
While many poultry operations cool their birds by submerging them into cold liquid, La Belle opts for air-chilling their meats. These specially created cooling rooms, chill the birds without letting them take on any extra water-weight and diluting the flavor of the meat.
