Puff Pastry Breakfast Croque Madame RecipeIngredientsPuff pastry1 egg1 tsp. milk4 oz. Gruyere cheese4 slices Iberico Ham or Prosciutto di Parma4 eggsSea Salt and ground pepper to tasteFresh chives, chopped for garnishDirectionsPreheat oven to 400 °F.Cut the puff pastry in 4 equal squaresLay evenly apart on an oven cooking tray/ pan with parchment paper and prick the center with a fork.Whisk the egg with the milk and brush the squares lightly, then season with sea salt and pepper.Fold each slice of ham by the middle and place on top of the puff pastry.Cover the ham with the gruyere cheese on the edges but leaving the center without cheese.Bake for 10 to 15 minutes until the edges are a little golden and starting to puff, remove from the oven and using the back of a spoon, press the center of each square to make an indent for the eggs.Crack 1 egg at a time in a small bowl and then carefully drop on top of the ham. Repeat for each one.
