The saddle is made of the two loins that run along the center of the back of the animal, on each side of the spine. It’s a small, easy to handle cut, perfect to roll and stuff in recipes like rolled rabbit saddle, wrapped with bacon or succulent pancetta, or stuffed. One gourmet option to try? Rabbit saddle stuffed with foie gras, for a match made in culinary heaven. Rabbit is a naturally lean meat, with very little fat, so it’s a healthy protein to add to your diet. The leanness is also why it’s so nicely complemented with rich ingredients like bacon or foie gras, which add a little succulence to the preparation.
