Made from raw cow’s milk, Rush Creek is inspired by the iconic French Vacherin. Wrapped in spruce bark (to help the soft and pliable cheese retain its shape), this step also lends its paste a sweet, woodsy flavor. A young cheese, its rich scoopable texture, and deeply savory notes are a favorite among all who try it. Its profile is something akin to beef broth: complex and savory, with distinct notes of umami nuance.
