This large Berkshire Pork Boston Butt comes from the shoulder of the animal, presented with the skin and bone intact. Since the shoulder muscles can be tough and sinewy, this cut is best-suited for long, slow cooking. Let it simmer in a winter stew for example and the meat will slowly tenderize, falling off the bone at the touch of your fork.
