The leg is already deboned, so it's easy to prepare, and with an even shape, it's easy to cook and portion out evenly. Prepare it with a rub of spices, tenderize it with a marinade, sprinkle with your favorite fresh herbs, or just a good seasoning with sea salt and pepper. A good, slow roast is the way to go with lamb leg, or a butterfly and give it a turn on the grill.
