Perfect Quinoa Salad RecipeIngredients½ cup quinoa1 red onion, diced2 round tomatoes, seeded, peeled and diced½ red bell pepper½ yellow bell pepper4 tbsp. extra virgin olive oilJuice of ½ lemon½ tbsp. balsamic vinegarSalt and pepperDirectionsBoil water in a full medium pot and add the quinoa (previously rinsed carefully under cold water). Boil for 20 minutes, then strain under cool water and reserve to cool.
