What is Yuzu Kosho?
Yuzu Kosho is a traditional Japanese paste made from chilies and yuzu peel. Yuzu is a Japanese citrus fruit that has a bright flavor sometimes compared to a cross between a grapefruit and a lemon. The spicy chilis bring heat, and the addition of salt rounds it out. The combination is then fermented to deepen the flavors and allow them to meld into one another. A delicious condiment and many chefs’ favorite secret weapon, you’ll find this ancient Japanese paste in all the best restaurant kitchens.
