Bordier Churned Butter in a Bar, Salted
Made using an artisanal method perfected in the 19th century, Bordier butter boasts a nuance, complexity, and texture other butters can only dream of. While most commercial butters are produced a mere six hours after the cow is milked and churned in about ten minutes. Bordier’s preservative free butter requires a different, much slower process, taking a total of 72 hours.
This butter is made from the milk of free-ranging cows that graze on the lush pasture land of Brittany. Instead of being kneaded in a high-speed stainless steel machine like most generic butters, Bordier butter is made in a wooden machine that works slowly, kneaded the butter for thirty minutes at a time. Finished by hand with two small wooden paddles, the butter is salted or infused with various flavors and formed into small rectangles before being wrapped in their signature paper collars.
Once reserved for the white linen-covered tables of michelin-starred restaurants, these creamy blocks of Bordier butter are now for sale at a select number of gourmet shops.
