What is Iberico Pork?
Ibérico Pork, comes from pigs bred and raised in specific regions of Spain, particularly the Iberian Peninsula, located in the southernmost reaches of the country.
Iberico pork is the best in the world (or so the Spaniards claim!). It is succulent, finely textured and tender, with a significantly higher fat content than domestic pigs. This fat is higher in healthy fatty acids, much like is the case with Wagyu beef for example. The type of fat found in Iberico melts at low temperatures, which is why cooking with iberico is a unique proposition where the keywords are low and slow. It’s a delicate balance between cooking long enough to melt the fat, but no overly long so that you overcook and render it dry.
