What is Wagyu New York Strip?
You might also know this famous steak as the striploin, a fantastic cut of beef that’s cut from the short loin of the cow. It’s known for its really intense flavor, an incredible tenderness, and next-level levels of marbling.
Marbling refers to the fat within the muscle, and whta’s unique about Wagyu is that high amount and high quality of that fat, that melts as it cooks rendering it decadently buttery and rich. Our Wagyu New York Strip steaks are sourced from Australia, where they follow stringent standards to ensure you get the best quality, and from Japan, the mecca of premium Wagyu beef. We don’t carry American Wagyu at this time.
Grading Wagyu Beef

Cooking A Wagyu New York Strip Cut
Cooking Wagyu beef is an art, and with these tips, you’ll achieve perfect results every time.
1. Preparing: Allow your Wagyu New York Strip to come to room temperature before cooking. This ensures even cooking throughout.
2. Seasoning: Keep it simple. A sprinkle of sea salt and freshly ground black pepper is all you need, because the marbling provides enough flavor.
3. Cooking Methods:
- Grilling: Preheat your grill to high heat and sear each side for two to three minutes to develop a lovely brown crust, then move to a cooler part of the grill to finish cooking.
- Pan-Searing: Heat a cast-iron skillet over high heat until it’s smoking, then sear the steak for 2-3 minutes on each side, reduce the heat and cook to your desired doneness.
- Sous-Vide: This method ensures a very evenly cooked steak. Set your sous-vide to 130°F for a medium-rare finish. You want this to cook one to two hours, and finish with a sear in a hot pan to develop a crust.
