Chocolate Ganache How ToIngredients¾ cups chocolate, 70% cacao, chopped or in chips¾ cups heavy whipping creamDirectionsIn a medium heatproof bowl, place the chopped chocolate.Bring the cream to a boil in a small pot, and remove from heat. Immediately pour it over the chocolate and let it melt, without mixing. After 2 minutes, whisk until smooth. Use ganache while warm, or follow directions to cool it down and store for later use.To store: let the ganache cool down and cover it with plastic film, poking holes to circulate air.
