Mortadella with Pistachios
Our classic Italian-style Mortadella is a cut above anything you’ve ever tried. Made in Oregon by Olympia Provisions, this starts with hand-cut pork fatback, studded with meaty pistachios harvested in California, and perfectly seasoned with peppercorns and aromatic baking spices. It has a silky and fatty texture, offset with the crunch of the pistachios, plus a little heat from the peppercorns for a full and flavorful, smooth charcuterie delight.
Slice paper-thin and pair with your favorite cheese, some crusty bread, a bold French mustard, and savor a whole new bologna experience. Or elevate a simple sandwich, enjoy it as part of an antipasto platter, or savor with a glass of Chianti.
Ingredients: Pork, pork fat, water, less than 2%: milk powder, salt, pistachio, dextrose, garlic, spices, Swiss chard powder, black peppercorn, natural flavors, lactic acid culture.
